Stainless steel burners are very common and for good reason — they are considered hardy and will last a long time. Cast iron burners deliver a lot of heat very quickly. but can be prone to rusting. Infrared burners are more useful for giving the meat a burst of heat and won’t work for delicate cooking.
Buying a grill with a side burner can add more to the overall cost. so it’s best not to buy one just for the sake of it. Side burners are incredibly useful for cooking other things while you’re searing the meat. but if you’re not going to be doing that often or if you have a kitchen in close proximity to your grilling area then you can probably get away without one.
The warming rack of a grill is raised above the heating element. so whatever you put on it cooks more slowly than what you’ve got directly on the grill. The warming rack is used best when cooking vegetables that require low heat, however. most people find that the warming rack is the first thing they get rid of when they buy a new grill. If you’re not going to be cooking a lot of vegetables on your grill then you can probably forego the warming rack altogether.
The number of burners you require depends on how you are going to use your grill. If you are planning on always cooking a lot of different kinds of meats, you might opt for a grill with more than one independently controlled burner, so that you can cook at more than one temperature. However. if you want a portable grill you may be limited to the one burner.
BTU stands for British Thermal Units, and is the measurement of energy output from your grill. It is defined as the amount of heat that is required to raise the temperature of one pound of water by one degree Fahrenheit. All grills have different BTU outputs. but the key to finding a good grill is to look for 80 to 100 BTU per square inch of cooking space. Higher BTU models will burn fuel faster, so keep that in mind.
